20 April 2005 - First vinification of a vin liquoreux rouge : "Audace"
Poulsard grapes harvested in mid October where dried on straw until April 20, 2005. After this long "passerillage", the grapes were destemmed and fermented like a red wine for 40 days before pressing. The result is a unique wine with aromas of red fruits and prunes, and the mouth which is balanced between sweetness and tannin. It is wonderful with chocolate in all its forms.
