22 December 2004 - The harvest of December 22: Cuvée Mélodie
For the birth of Mélodie in 2004, we wanted to produce an exceptional cuvée. The idea of making an ice wine had always tempted me and in December 2004 we had ideal conditions for it. December 22, it was 12°F in the early morning with no snow. That allowed us to harvest about 900 kilos of grape between 4 and 7 AM. Pressed at the ambient temperature, part of the water in the grapes was frozen which had the consequence of concentrating the sugar and the aromas in the small quantity of juice which dripped from the press. The result, a concentrated nectar of sugar, minerality and aromas - a unique cuvée.
